Ingredients
9 medium boiling potatoes (about 3 lb.)
1/2 lb. finely diced bacon ( about 1 1/2 cups)
1/3 cup finely chopped onions
1/4 cup white wine or cider vinegar
1/4 cup water
1/2 tsp. salt
1/4 tsp ground black pepper
2 tbsp. finely chopped parsley
Preparation
Boil potatoes but don’t overcook them or they will fall apart when sliced. Drain, peel and slice potatoes. Set aside.
In a heavy skillet cook bacon on moderate heat until brown and crisp. Drain on a paper towel. Add onions to the bacon fat and cook until they are transparent but not brown. Stir in the wine (or vinegar), water, salt and pepper. Cook stirring constantly for a minute or so.
Pour the hot sauce over the potatoes, turning the slices over gently to coat them evenly. Stir in the bacon bits, taste for seasoning and sprinkle with parsley.
Serve at once or set aside and serve at room temperature.
